Aate Ke Laddu is the quintessential Indian mithai that our mothers made used to make for us every time we happen to leave home to go to hostels or work in another city or just to travel. These don’t go bad for weeks, so it’s a perfect & quick snack while traveling & are invaluable when hunger strikes at odd hours. These aate ka laddus are specially made in winters as the Edible gum added in this laddu gives heat to the body hence maintaining the body temperature. While Ghee provides energy in winters, Gond (edible gum resin) has a considerable medicinal value and is considered good for constipation, skin and improves immunity.
Atte Gond Ke Laddu are quite rich and high in calories and while they provide a good degree of warmth in winters, they should be eaten in moderation. Usually, 1-2 of these Gond Laddus are sufficient if you are feeling hungry.
Actually, there are two kinds of Edible gum available in the market, One is Babool gum (used here) & the other is Almond gum (Badam Pisin). While first gives heat to body useful in winters later has a cooling tendency hence useful in summers.
Aate ke laddu or Wheat laddu are aromatic, delicious to eat and provides an instant spike in energy to the body. This Atta Ladoo also knows as Gond Ke Ladoo or wheat laddus are round-shaped home-made delight prepared with whole wheat flour (atta) and edible gum (gond) along with liberal use of ghee (clarified butter) and sugar.
For that extra crunch & nutty taste, a load of assorted dry fruits, Poppy seeds (posta), musk melon seeds (magaj) are added at the time of preparation.
Atte ke Ladoo is a wholesome and nutritious food, with a good storage life and This simple recipe for Atta Ladoo has remained popular since ages and is mainly prepared during winter seasons.
Gond ke Ladoo or sonth k laddu (suthoura) is considered to be very nutritious. They are traditionally given to lactating mothers after delivery as besides providing much-needed energy, dry ginger powder(sonth) added in the laddus are believed to have rejuvenating properties as well.
Traditionally in aate k laddu recipes, All the ingredients are separately fried and then mixed. However, this recipe here will be a very easy & quick way of preparing the laddus. This way of making laddu we learned from our mothers.

Ingredients:

2cups of Wheat flour
2cups of Ghee (Caramelized Butter)
3/4cup of Gond(Edible gum)
1cup of Dry Roasted Mixed Nuts
½cup of poppy seeds & melon seeds
½cup of flax seeds
1cup of Bura Sugar

Recipe:

Take a heavy bottom kadhai & add all ghee.

In that add wheat flour.

Mix it really well, Make sure that your mixture is of liquid kinda consistency. Fry it on a medium flame for 25 mins or till the nice roasted smell starts coming from the mixture.

In the meantime take all the nuts dry roast altogether & grind them coarsely.

Take the edible gum & grind all of them into a fine powder.

Powdered gum is very much required for this easy way of making laddu, If not powdered properly, the big pieces will come to mouth.

Dry roast flax seeds & grind coarsely.

After the flour is fried add the powdered gum & it will start popping. You will hear the sound of popping.

After the sound stopped, All the ghee will be almost absorbed & It is a perfect time to add Dry fruits.

Add Dry ginger powder & turmeric & mix all well.

Add flax seeds, melon seeds, poppy seeds & mix well.

After all the ingredients, Rest the mixture for 2-3 hours to cool. It is very essential that mixture is at room temperature because when we add sugar it should not melt.

When mixture got cooled, Add bura sugar and use hand to mix all.

When all bura sugar is mixed, Start binding into the form of laddu with a single hand & try to give a round shape & That’s all it is ready.
