Thekua or Deep fried whole wheat biscuit is a sweet recipe from the land of Bihar. This is also popular in Jharkhand, east UP & Nepal region. As soon as the Diwali’s hustle & bustle settles down, the people from Bihar get ready to rejoice the much-awaited Chhath Pooja. It is an important festival in Hindu religion, celebrated mostly in Bihar and Nepal’s Mithila, This Puja is dedicated to the worship of the Sun-god and his wife Usha. Devotees perform the puja to thank the Sun god for supporting life on earth
This mildly sweetened dish usually made in winters with jaggery to keep the body warm. This is also a perfect snack while you are traveling. Planning on the journey via train usually demands the food which can survive without refrigeration. Thekua plays a great part in that. It can be prepared & carried without preservatives. This thekua recipe is a healthy diet as it has whole wheat, jaggery & ghee.
We will not waste much time & will start with the recipe.


Ingredients:


2 cups whole wheat flour
3/4 cup jaggery syrup
2 cardamom or 1/2 tsp cardamom powder
2-3 tbsp chopped dried coconuts
1 cup Desi ghee (caramelized butter)
1 tbsp sugar

Recipe:

Make jaggery syrup by putting jaggery in boiling water & 2 cardamoms. Switch off the flame. After jaggery dissolve, strain with the help of cotton cloth in a clean container.

In a bowl, add whole wheat, coconut, 2 tbsp ghee.
(At this stage, you can also add fennel seeds. We don't like it so we avoided it but people who like the flavor of Fennel seeds must use it.) Now add jaggery syrup in the bowl & mix all ingredients to make a dough.

The dough of thekua is hard & it should not be soft.
After the dough is done, Add sugar crystal & mix well (Totally optional)

Make shapes of leaves kind of structure out dough small portions.

now give a design of your choice with the help of a fork, If one has thekua mold or cookie mold, they can use that.

After all the thekua is done. Put a kadhai on gas and add the remaining ghee to fry the thekuas

one by one of low to medium flame fry all the thekuas.

make sure it is perfectly brown from all sides.

And it is ready!! Keep in an airtight jar for future use.
