Winters special gajar ka halwa

When winter hits the North-India, the season of vegetables starts. The beautiful red carrots (Gajar) are the ones you don't want to miss. Be it mix veg, fried rice, salads, or pickle (achaar) carrots are everywhere. But what you don't want to miss during winter is carrot halwa. Trust us, nothing is more comforting than a scoop of gajar ka halwa near a bonfire in chilled winters. The mixture of carrot, dry fruits, sugar & cardamom gives it an indescribable taste. Its the kind of dessert one can serve for big parties or day to day guests or for pleasing kids. Other variety desserts like besan k laddooaate k laddoo, orange cakes, nariyal laddoo are also a must-try for you. An important fact about carrots that they are rich in minerals, fibers & vitamins which are perfect for eyesight & cardiovascular health.

So, let us start with a sweet & simple recipe

Ingredients:

1 tbsp ghee
1/2 kg grated carrot
1 ltr cooked full fat milk
1 cup powdered sugar
1/4 cup chopped almonds
Pinch of cardamom
Handful nuts of choice

Grate the carrots in medium size, Add 1 tbsp ghee (caramelized butter) & grated carrot in a kadhai.

Roast the carrots on medium flame after it is roasted carrot will change its color.

we used already cooked pink-colored milk. For this, milk is boiled on low flame for several hours till it becomes 3/4th of its original quantity.

Now, Pour this milk inside the roasted carrot mixture & keep stirring on low flame till it thickens a little.

Now add chopped Almonds first & let it cook for 2-3 mins.

Now, add chopped dry fruits of your choice & allow it to cook again for 2-3 mins on low flame.

Add powdered sugar & cardamom powder now, It will change its color to dark orange or red.

Now Allow it to cook on medium flame & keep stirring till desired consistency is reached.

Garnish with chopped nuts & serve hot or cold, the choice is yours.

Ps: 1) Chopped Almonds provide a nice crunch to every bite.

2) Sugar can be replaced with any sweetener of your choice.

3) Traditionally halwa is prepared with khoya, but here we are making the recipe with the ingredients available at home.

4) Dry fruits are totally one's choice.
