Curd vadai (South-Indian style vadaai)
Ingredient for Dahi Bhalle
1 cup Urad Dal
1 tbsp finely chopped green chili
1 tbsp finely chopped onion
1 tbsp finely chopped coriander
oil for frying
For South-Indian garnishing:
oil
mustard seeds
curry leaves
sea salt
red chili
1/4 cup grated coconut
2 green chilies
1 tsp cumin seeds
beaten curd
Recipe:
Soak urad dal overnight & grind it into a fine paste. Now beat the mixture till it becomes airy.
Add chopped onion, coriander, & chili inside the dal mixture. add salt if required.
Take a wet muslin cloth, put it over marble slab. Now put a small ball of dal mixture over it & wet your hand & make a hole inside the vada.
Now deep fry the vada on medium flame.
Now take out all the vadas. Soak all the vadas in the water.
In the meantime, take freshly grated coconut in a mixie grinder, add chili, salt & cumin seeds. grind it into a fine paste & mix it with beaten curd.
Now make tadka with oil mustard seeds, curry leaves & chili & pour over curd.
Now squeeze all the excess water of soaked vada & add them inside the curd & vada mixture for at least 20-30 mins.
It is ready to serve.
PS:
1)To check whether Dal mixture became airy or not. Pour a drop of mixture inside a cup of water. if it floats your mixture is ready. If its stick to the bottom, We need to mix it for some more time.
