Dahi vada/ dahi bhalla/ dahi bada/North indian vada


DAHI BHALLA (North-Indian style Dahi vada)

Ingredient for Dahi Bhalle


1 cup Urad Dal
1 tbsp chironji
1 tbsp finely chopped green chili
1 tbsp finely chopped ginger
1 tbsp finely chopped coriander
oil for frying


For North-Indian garnishing:

Sweet tamarind chutney
Green mango chutney
Barik sev
black salt
red chili powder
roasted cumin powder
chopped coriander
beaten curd


Recipe:

Soak Urad dal overnight & then grind it into a fine paste without using any extra water. Now beat the urad dal till it becomes airy.

Get ready with wet muslin cloth over a marble slab & put a small ball of urad dal mixture.

Press it gently & add little chirronji, chili, coriander & ginger pieces.

Now fold it gently as shown in the picture.

After folded gently take the mixture in hand.

Now deep fry it in oil on medium flame.

After it is fried in deep brown color take it out.

Pour all the vadas in cold water for 1-2 hours.

Now take out the vadas from water & squeeze out the excess water from it. Put all the squeezed vadas into the beaten curd for 1 hour.

Now when one is ready to eat, take out the curd vada, add little Tamarind chutney, green mango chutney. Garnish it with black salt, cumin powder, red chili powder, chopped coriander & baarik sev.

PS:
1)To check whether Dal mixture became airy or not. Pour a drop of mixture inside a cup of water. if it floats your mixture is ready. If its stick to the bottom, We need to mix it for some more time.
