Nariyal Laddu

Coconut is a very underrated fruit.
It is maximumly used in the Southern part of India in most of their cuisines!
But do you know? We get benefited from every part of the coconut tree
For eg., Coconut shells can be used to keep water for birds on your terrace. I have found some of the organizations making eco-friendly bowls from shells.
The coconut husk is used to make cocopeat which is one of the main elements used in plantation to make well-drained soil.
The coconut is useful in many forms
Coconut cheese, coconut milk, coconut oil, coconut pudding anything can be prepared with coconut.
Coconut which is also called as nariyal or gari in north India & called as thengai in Tamil-nadu is a versatile food & used in most of the healthy recipes.
We at Indian eating habits got inspired by Shilpa Shetty Kundra & prepared this Coconut laddu recipe which is very quick & easy to prepare. This coconut laddu is a very healthy recipe that will instantly satiate your dessert longings.
This coconut laddu made with jaggery & no refined sugar is used.
Some people use condensed milk available in the market to prepare coconut laddu. But we at Indian eating habits don't feel good about consuming condensed milk. So this coconut laddu is without condensed milk.
One more way this nariyal laddu can be prepared is with khoya (I will share soon). But this nariyal laddu recipe is without khoya.
Try this for any special occasions & you gonna love this for sure.
Ingredients:
1 cup desiccated fresh coconut
1/2 cup jaggery powder
1 tsp ghee
1 tbsp poppy seeds
1 tbsp melon seeds
1 tbsp crushed nuts
1/2 tbsp cardamom powder
1/2 tbsp dry ginger powder
1/4 cup desiccated dry coconut
Recipe:
- Add coconut & fry for 10 secs
- Add jaggery & again fry for 10 secs
- Now, add poppy seeds & melon seeds & mix for 30 secs
- Add crushed nuts & cardamom powder
- Add dry ginger powder & mix all well for 2-3 mins.
- Now, when the mixture reaches binding consistency, Remove from gas flame and start binding into the shape of laddu.
- Cover laddus with dry coconut powder & its ready. Enjoy homemade healthy nariyal laddu.
