Mashed Egg-Plant Indian ver/ Baingan ka Bharta |
Ingredients:
2 bottle size brinjal/ Egg-plant
6-8 pods of garlic
4 chili cut into half
2 medium-size tomato
2 tbsp mustard oil
1inch ginger
Coriander
Pinch of dry mango powder (optional)
Recipe:
Take brinjal, wash it properly & apply little mustard oil all over the surface of the brinjal. Now, Slit it halfway through on one side. Insert garlic & chili inside.
Now switch on the Gas and on medium flame roast brinjal from every side.
In the meantime take two medium-size tomatoes. Make a light cross-cut on the bottom side of the tomato & microwave for 2 mins in a container with water to Parboil it.
When brinjal is roasted from all sides & Tomatoes are done,& keep it aside in a bowl to let it cool.

Remove the skin of brinjal & tomato.
Remove the top portion of brinjal & with hand mash garlic, chili, tomato, brinjal everything together. Add salt, dry Mango powder, Grated ginger & coriander.
Now, Drizzle with Mustard oil, garnish with chopped coriander and enjoy with chapatti.
