Some people have always this preconception that soup can't be easy. They say!! Doesn’t soup involve lots of chopping and simmering and layering of flavors? Apparently not, as we discovered while working on this easy pumpkin soup recipe. We at Indian eating habits bring out the easiest & tastiest soup which will make your wintery morning the happiest one.

But the idea of starting a soup with Pumpkin is like a big question? would it taste as good as any other soup? The answer is a resounding yes, and we'll tell you just how to do it.

We use a little Milk in our version for extra richness, but if you want to skip the dairy, you can totally sub coconut milk. We are using veg stock here but if you want to make non-vegetarian, a simple swap for chicken broth will do the trick. We also keep the seasoning to a minimum in this recipe, just pepper but don't stop yourself from adding any of your favorite herbs and spices to make it spicy pumpkin soup.

Ingredients



1cup or 250 gms of yellow Pumpkin cut in pieces
2-3 shallots or 1 small onion
4-5 cloves of garlic
1tsp olive oil
1 tsp butter
½ cup milk
1 tsp pepper
½ lt vegetable stock
Salt as per taste


Cream for garnishing
Melon seeds for garnishing


Recipe:



1) Place a wok over the stove, add olive oil, garlic & shallots all together, fry it on a medium flame for 1 min. Do not let it burn.

2) Add Cut Pumpkins & saute it till tender on medium flame.

3) Cover the pumpkin to cook for 3-4 mins & after it is done, remove it from heat & let it cool down

4) Now, Add pumpkin in a blender & blend it into a smooth paste.

5) Now, switch on gas, In the same wok add this paste & cook on low flame.

6) Add vegetable stock & let the soup boil on high flame for 1-2 mins

7) Add thick milk, butter & cook for 1 min on low flame. Remove from heat, add salt & pepper. It’s ready!! Garnish with melon seeds & cream & Enjoy.

Ps: veg cube used for veg stock have salt already in it. So be cautious while adding salt to the soup.
Vegetable stock cubes: Take one cube and put in 1litre  hot boiling water, cover it for 5 mins. The cube will dissolve & stock will be ready. We are using Nestle Maggie Veg cubes.
