Millets like Ragi are a superfood. This cereal is a high protein which makes it a good source of protein for vegetarians. Ragi is also a very rich source of minerals. It has been found to have between 5-30 times the calcium content found in other cereals. It is also rich in phosphorus, potassium, and iron. Considering all these benefits, it is extremely surprising that in a world desperate for healthy Indian food recipes, Maximum people have never heard of ragi. In many places where it is grown, it is looked upon as a "poor person's crop". In India, it is greatly neglected and fast disappearing. The state of Karnataka is the highest producer of ragi in India, contributing to 58% of the country’s production. Ragi helps in weight loss, So those who looking for an Indian weight loss recipe can totally opt for this millet. The natural fat content in ragi is lower than all other cereals & since this fat is in its unsaturated form, hence substituting ragi for wheat and rice is a good choice for people trying to lose weight. Ragi contains a higher amount of dietary fiber food as compared to white rice. Due to this, ragi aid digestion prevents over-eating and makes you feel full for a longer span of time. It also contains an amino acid called Tryptophan which reduces appetite. We at Indian eating habits always try to come up with Healthy & easy to prepare Indian food recipes. One of Indian best breakfast, which we must thank south-India for inventing is IDLI & DOSA. Normal Idli prepared with rice is itself very healthy, but when we prepare it using Ragi it becomes super healthy & super tasty. This recipe doesn’t require traditional grinders, simply in a mixie jar, we can prepare it. Idlis & dosa when made from Fermented batter, the nutrition value increases because fermented foods are a good source of Vitamin B12. Vitamin B12 is essential to absorb Iron in the body.

Ingredients:


2 cups ragi grains
1 cup Idli rice
1 cup Urad dal
1 tbsp Fenugreek seeds
Salt as per taste

Recipe:


Soak Rice, ragi & dal with fenugreek seeds separately overnight.

Next day take half of the soaked ragi grains in a grinder & grind into a smooth paste, pour into the big container.

Take remaining ragi grains along with rice and grind again & pour it into the same container.

Grind soaked urad dal in the grinder & mix with the ragi - rice batter.

Add salt, mix all well, cover it & keep it like this for 2-3 hours at warm place.

After 2-3 hours, the batter will be fermented & ready to make dosa or idli.

Steam idlis or make dosas out of that, Ragi The superfood will satisfy your taste buds for sure.
