Thandai is a very refreshing drink prepared with nuts, spices, and sugar. It can be prepared with dairy milk or any milk of your choice. Thandai is common in North India where it is consumed during the festival of HOLI & Shivratri. Thandai meaning something which gives you a cooling sensation. It is a common drink prepared during the festival of Holi. This festival marks the change of season from winters to summers, hence cooler drinks like these find their place in fridge shelves. It is drunk on a day to day basis in summers to beat the heat. Our recipe is inspired by Shilpa Shetty Kundra. Indian eating habits follow her tips & tricks very closely to stay healthy
This thandai recipe will help you make super delicious thandai at home for Holi from scratch free of sugar, all artificial flavor, and colors. 

Here we are using Maple syrup as our substitute for sugar. If you don't have maple syrup, you can use, sugar or honey or agave.

Ingredients:

1 tbsp poppy seeds
1 tbsp melon seeds
1 tbsp sunflower seeds
2-3 tbsp anise seeds
2-3 tbsp of pista
1/4 tbsp pepper powder
1/4 tbsp cardamom powder
2-3 strings of Kesar
750 ml of Milk
5-6 tbsp of maple syrup

Recipe:

Take poppy seeds, melon seeds, anise seeds & sunflower seeds in a mixie jar.

In the same jar, take pista, pepper powder, cardamom powder.

Now grind all into fine powder & mix with a half cup of warm milk & keep aside. Warm the remaining milk in the thick-bottomed pan. Add milk & powder mixture in the milk. Keep stirring on a medium flame for 5 mins.

Now add Kesar strings & keep stirring on low flame for 10-15 mins or till the mixture thickens little.

When it is done, allow the mixture to cool down & after it comes to room temperature, add maple syrup & mix. Now, Put it in the fridge.

Take out chilled thandai when you need to serve. Pour in a glass, garnish with pista Kesar & enjoy.
