Soya chunks are a very underrated yet very nutritious vegetarian dish. For vegetarians its very difficult to incorporate daily proteins in their diet. Their comes soya in the picture. The residue remaining after preparing soyabean oil is sun-dried & made into chunks. which is very high in protein, iron, calcium & omega 3 fatty acids. Since these soya chunks have no flavor so to make them tasty we make different varieties of cuisines out of that. This time Indian eating habits have come up with conventional soya & aloo curry, which can be enjoyed with hot steaming rice or fulka or hot parathas. Try our other North-Indian curries to be enjoyed with fulkas or parathas.

Ingredients:

1 cup soya chunks
1 large potato cut in wedges
2 small tomatoes cut in wedges
2 small onions sliced
2-3 green chili
1/2 inch ginger roughly chopped
1 bay leaf
1 cinnamon stick
2-3 cloves
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala
1 tsp Kasuri methi
salt as per taste
2 tbsp mustard oil
water as required

Recipe:

Microwave soya chunks in water for 10 mins. After microwave, do not remove from water. let it be like that till we prepare the gravy.

now take all oil in a kadhai & fry the potatoes in low to medium flame.

Fry till it is cooked & golden in color. Remove from oil & keep it aside.

now in that same kadhai, fry the sliced onions till golden brown in color. fry it in low flame.

after it is fried remove from kadhai & let it cool.

In a mixing jar, take tomatoes, ginger & chili grind it into a fine paste. keep it aside.

now, In the same jar grind the fried onion to make a fine paste. Use water if required. In the same kadhai & in the same oil. Add cumin seeds, bay leaf, cinnamon & clove.

add the onion paste & mix well for 2-3 mins on low flame.

Now, add turmeric & coriander powder. Mix for 1 min on low flame.

Now, add tomatoes paste & mix well. Allow it to cook for 5-7 mins on low flame.

In the meantime, drain the soya chunks from water & clean with cold water. After cleaning remove all excess of water by pressing with hand & keep it aside.

Now as the tomato paste is cooked. Add potatoes, soya chunks, salt & mix all.

Add water 2 to 3 cup & let it boil on high flame for once.

Add garam masala & kasoori methi. allow it to cook on low flame covered for 3-5 mins.

& it is ready to serve!!

Ps: 1) For a richer color, Fry onion till nicely brown in color.
2) we have ground green chili & ginger together with tomatoes for fresh flavor. It can be fried with onion also for fried taste.
