Dhaniya Aaloo/ Potato with Coriander
Aaha!! Where should we start, This is such a tasty & easy prepared recipe that one can relish it even as a chat or snack or accompaniment with rice dal. This recipe comes from the state called Uttar Pradesh. The best thing about North-India is the change of season & accordingly the food habits also change. Winters are called the season of veggies. Fresh potatoes, coriander, carrots, cabbage are vegetables to name a few. Although potatoes are the king of vegetable & available throughout the year. There is a slight variation in winter potatoes (or sardiyon wale aaloo). Anything prepared with these potatoes gives it a unique taste as it is not sweet & mushy in nature. These are perfect for chaats or aaloo kachaloo or tikkis. Trust us you will love to eat this special dhaniya wale aaloo in these winters. These hare bhare aaloo will be your perfect tea snack as well. It is best for pleasing guests. Preparing this is no rocket science, All we need a fresh bunch of coriander (hara dhaniya) & a few basic vegetables & it will be ready in no time.
Ingredients:
- A fresh bunch of coriander
- 2 medium-size onion
- 1 kg boiled & peeled potatoes
- Few pods of garlic
- Chilli as per taste
Add oil in kadhai & add the paste of coriander, onion, chili & garlic.
Roast the masala till its color changes to brown from green.
Beetroot paratha, Pyaaz ka paratha,
Dal makhani.
