North Indian Thali (Festival special)
(1) Kachori
Ingredients:
1 cup soaked urad dal without skin
1tbsp Aniseed
1inch ginger
2 green chilli
Handful of coriander
2tbsp ghee
Salt for taste
4 cups wheat flour
Ghee for frying
Recipe:
Grind urad dal aniseed ginger chilli & coriander into coarse paste.
Add 1tbsp ghee in a pan, add the dal paste and fry it till the time the stickiness of dal goes away.
Let it cool down.
In a bowl add wheat flour, add the remaining ghee and little salt. Mix it well for 1-2 mins
With the help of water,make a soft dough.
In the meantime put a kadhai over stove and add ghee for deep frying.
Take a scoop size ball from dough make it into a cup shape with the help of wheat flour dust. Add urad dal filling inside & cover it properly.
Dust flat surface with wheat flour, roll the ball into poori shape with mild pressure.
Fry the poori and Tada!!

Ingredients:
250gm yam cut into pieces (Microwaved with water for 3-4 mins)
1tbsp oil of your choice
1tbsp Asafoetida
1tsp Cumin seeds
1 ½ inch ginger grated
1tsp turmeric powder
2tsp dry mango powder
1tsp chilli powder
½ tsp kashmiri chilli powder
Salt as per taste
Recipe:
Put a wok over stove
Add oil, let it heat
Add cumin seeds, asafoetida & turmeric.
Now add yam and on medium flame mix all well for 1-2 mins
As it is already boiled so it will mushy which is good.
Add all the powders masalas along with salt & keep stirring on medium flame for 2-3 mins
Continuous stirring is important because yam may stick to bottom.
In last
Add grated ginger and garnish with coriander.

Ps: Dry mango powder is essential as it will remove the itchiness caused by Yam
Fresh ginger in the last gives that fresh flavour which goes very well with yam
Personally I am FAN of Ginger.
(3) Radish salad
Ingredients:
2 radish
½ inch ginger
Coriander finely chopped
1tsp lemon juice
Salt
Recipe:
Grate radish and ginger
Now, mix all ingredients together

(4) Dum-aaloo
This dum-aaloo masala is available only at Allahabad/Prayagraj UP.
but you can buy any other dum-aaloo masala from local shop &
can prepare the way it is written in the Direction section of the wrapper.

(6) Lady Finger Kallonji
Ingredients:
Masala:
3 tbsp coriander seeds
2 tbsp aniseeds
1 tsp Fenugreek seeds
1/2 tsp black cumin seeds/kalonji seeds
Oil for frying 2 tbsp
Lady finger ( slit & cut in half) ½ kg
1 tsp turmeric powder
1 tsp chili powder
1 tsp dry mango powder
Salt as per taste
Recipe:
Dry roast all seeds one by one
Grind it all except kalonji seeds into coarse powder.
Mix all powder masala into grinded mixture.
Put a wok over stove
Add oil, lady finger & masala
Mix all and cover it on sim for 2-3 mins
After it is half cooked
Add salt and keep stirring on high flame for 30 secs
Put on sim and cover for 2-3 mins

(7) Roasted cauliflower
Ingredients:
2 cups cauliflower florets
2tbsp mustard oil
Pinch of asafoetida
1tsp cumin seeds
1tbsp sabzi masala
1tsp red chilli powder
1tsp garam masala
1tbsp dry mango powder
Salt as per taste
Recipe:
In a pan add oil, cumin seeds & asafoetida
Add florets and on medium flame fry it well without covering till every side of Florets get roasted into nice brown colour.
After that add salt & all the masala except dry mango powder, mix and cover it to cook on low flame for 2-4 mins.
After that, add salt dry mango powder and mix

(8) Paneer in Posto Gravy
Paneer in posto gravy
*No onion No garlic*
Ingredients:
200gms cottage cheese
2 tbsp poppy seeds
2 tbsp melon seeds
7-8 cashews
1 medium tomato
Handful of coriander leaves
2 Green Chilli
½ inch ginger
1 tsp turmeric powder
1 tbsp sabzi masala
Salt as per taste
Water as required
1 tsp cumin seeds
1 tsp cooking oil or butter
Recipe:
Soak the poppy seeds, melon seed & cashew together in water for 1-2 hours & grind them into a fine paste.
Also, grind tomato coriander, ginger & chili into fine paste separately.
In a kadhai
Add oil cumin seeds and tomato paste, fry it on medium flame for 3-4 mins
Add turmeric powder & sabzi masala & mix for 1 min
Add poppy seed paste and cook it on medium flame for 4-5 mins
Add water, cottage cheese & salt & let it boil on high flame for 2-3 mins
Adjust water for required consistency
