DAHI VADA

(North-Indian & South-Indian Style)


Dahi Vada is basically bagel-shaped fritters made from seasoned black gram lentil (without skin) batter soaked in thick curds and garnished with different ingredients at different parts of India. The Curd Vadai is made is broadly two ways,

1) South Indian thayir vadai
2) North Indian dahi Bhalla



                                                                                      
In North-Indian preparation, the shape of vada is either circular or D shaped. These vadas prepared with some interesting filling & while serving it is topped with curd, Imli chutney/Tamarind chutney, fresh herbs & spices. Check recipe here

In South Indian preparation, the shape of vadas will be of Donut type i.e. circular with a hole in between. These vadas are topped with plain curd sometime & sometimes with a mixture of curd & coconut. Again garnished with tempered mustard seeds, grated carrots, herbs, and condiments without any chutney. While dahi vada involves deep-frying of the vada, the nutritional value of dahi vada remains immense due to the presence of lentils and curd. Lentils are rich in protein and curd is an excellent source of calcium, vitamin B-12, magnesium, potassium, vitamin B-2, and several other nutrients.

Curd Vadai or Dahi Vada or Dahi Bhalle is everyone’s favorite dish, whether it is a party or a get-together. It is liked by all ages. As season changes in North-India during the festival of colors HOLI. These Dahi Vada are the most prominent preparation. Curd Vada or Dahi vada can be prepared in a day advance and served the next In this way vadais are softened in the curds & when served with fresh seasonings tastes divine. It also prevents last-minute hassles and heartaches. Dahi vada in tamizh called thayir vadai is a very delicious south Indian snack. Everyone loves to make this dish very often. Ulundhu(Urdhal) vadai/Medhu vadai is a great and tasty appetizer. Also, south-Indians make this vada for most of the festivals for neivedhyam (offering to the god). Medhu vadai with idli, Pongal, sambar & Chutney is a famous breakfast combo in Southern Part of India.
