Winter Special Creamy Tomato Soup – Without Cream, Corn Flour, or Artificial Flavors

soup

There’s something magical about a warm bowl of tomato soup on a chilly winter evening. This creamy tomato soup, crafted with love and health in mind, uses fully ripened desi tomatoes (country tomatoes) and skips cream, corn flour, and artificial flavors. The result? A flavorful, wholesome dish perfect for light winter dinners that will warm your heart and nourish your soul.

This recipe has my heart, not just for its taste but also for its simplicity and nutritional benefits. Let me walk you through this delightful creation.

Ingredients

  • 500g fresh desi (country) tomatoes, fully ripened
  • ½ cup shallots or small onions
  • 10–25 garlic pods
  • ¼ cup cashews
  • Salt to taste
  • 2 tbsp khandasari sugar (non-refined)
  • Water as needed
  • 1 tbsp butter (optional)
  • Freshly ground black pepper, to taste

For Garnish:

  • Coconut cream
  • Fresh parsley (or basil, oregano – optional)

For Serving:

  • Oregano garlic toast

How to Make the Creamiest Tomato Soup (Without Cream!)

  1. Boil the Ingredients:
Combine tomatoes, shallots, garlic pods, cashews, salt, sugar, and water in a pot. Let them boil until the tomatoes are soft and the cashews are tender.

  2. Blend for Perfection:
Using a hand blender, puree the boiled mixture until smooth. Strain if needed to remove any seeds or skin for a velvety texture.

  3. Add Butter:
Transfer the soup back to the pot, add butter, and simmer gently. Adjust salt and pepper to taste.

  4. Serve with Love:
Ladle the hot soup into bowls. Top with a swirl of coconut cream and garnish with parsley or basil. Pair it with crispy oregano garlic toast for a delightful meal.

Why This Recipe is a Winner

  1. Nutritional Benefits of Tomatoes:

    Country tomatoes

    • Rich in lycopene, a powerful antioxidant that supports heart health and boosts immunity.
    • Packed with Vitamin C, aiding in skin health and fighting off winter colds.
    • A good source of potassium and fiber.
  2. Healthier Than Store-Bought Options:
By skipping cream and artificial thickeners like corn flour, this soup remains light yet creamy, thanks to the natural richness of cashews. Khandasari sugar adds a subtle sweetness without the downsides of refined sugar.

  3. Perfect Light Winter Dinner:
This soup is filling yet light, making it ideal for a cozy winter dinner. Pairing it with oregano garlic toast makes it a complete meal that’s both nourishing and satisfying.
