On the joyous occasion of Makar Sankranti, We at Indian Eating habits has come up with satvik Khichdi recipe.
In north-India people prepare Khichdi on the occasion of Sankranti. In south-India this festival known as Pongal is celebrated by preparing Pongal (A dish made of rice & moong dal) which is a tamizh synonym of Khichdi.
As this Sankranti or Pongal is a harvest festival, everywhere in India cuisines are cooked using grains. Today on 15th Jan 2020, Himachal Pradesh Department of Tourism in association with Shimla-based Durga Devi Behari Lal Charitable Trust, entered the Guinness World Records by preparing 1,995-kg ‘khichdi’ (a dish made from rice and lentils) (News source: Hindustan Time)
Khichdi is a very easiest recipe one can make in-home. To make it more nutritious & tasty, We have come up with this version of vegetable khichdi.
Generally, In the state of Uttar Pradesh khichdi is prepared with rice & dal only. It is served along with Aaloo chokha or aloo bharta (mashed potatoes with spices) & papad or apallam. On the other hand, The Pongal which is the south-Indian version of khichdi is served with sambhar & chutney.
So, Without taking much time lets jump to the recipe which is inspired by Bong Eats.

Ingredients:

1/2 cup of rice (100gms)
1/2 cup moong dal (100gms)
4-5 cauliflower florets
1 potato cut in cubes
1 carrot cut in cubes
3-4 fresh beans cut in 1/2 inch size
2 tomatoes roughly chopped
1/2 cup green peas (blanched)
2 green chili slit
1 tbsp ginger paste
1 tsp turmeric powder
1 tsp roasted cumin powder
2-3 tbsp mustard oil
1 tsp shah jeera
2 bay leaves
2-3 cloves
1 stick of cinnamon
1 tsp normal jeera
2 tbsp ghee
coriander for garnishing
salt for taste.

Recipe:

Rinse rice 2-3 times & keep it aside.

Dry roast moong dal first.

After moong dal roasted, rinse & keep it aside.

In a small cup, take ginger paste, turmeric & jeera powder. Mix all with water & keep aside.
Indian masala

Now put wok over stove, Add 1 tbsp mustard oil fry potatoes & carrot for 3-4 mins on medium flame. After it is done remove & keep it aside

Now, add cauliflower & beans in the same wok & fry for 3-4 mins till golden. After done. remove & keep aside.

In the same wok, add 2 tbsp of oil, add bay leaves, clove, cinnamon & shah jeera.

As soon as shah jeera crackles, add the mixture of turmeric ginger & jeera powder. Fry it for 2-3 mins on medium flame.

Now, add tomatoes & 1 slit green chili. Mix & cover it to cook for 3-4 mins on medium flame.

After the tomatoes became mushy, Add rice & mix well for 2 mins on medium flame.

Now add moong dal & mix.

Add 4-5 cups of water & salt to taste. cover & let it cook on a medium flame for about 10-15 mins.

After the rice & dal is half done, Add all the veggies & again cover it cook on medium flame for another 10 mins.

Now, prepare a tadka. In a tadka pan, add ghee, jeera, other slit green chili & asafetida or heeng. after jeera crackle pour-over khichdi & mix.

Garnish it with coriander & serve.
